I found myself drooling over the French onion soup on Cupcakes and Cashmere so my friend,
Kitty and I embarked on an onion-riffic journey. You can find the recipe here. Now first thing's first:
slice 4 onions without crying.

On medium heat, Saute olive oil and onions until golden brown. Add butter, garlic, thyme, salt, pepper, and a bay leaf. Cook for 10 min. Raise heat to high, add white wine and port (recipe advises you to add port at the end but we decided we wanted a milder taste). Bring to boil for 5 minutes. Add chicken stock and simmer for 45 min. |
Ladle soup into ramekins. Add a slice of toasted country bread. Sprinkle with grated Gruyere cheese. |
Stick in broiler so cheese bubbles. |
